- Start cooking the apples: Combine the chopped apples, apple cider vinegar, and water in a large saucepan or Dutch oven. Cook over low heat, stirring often, until the apples begin to soften, about 4 minutes.
- Simmer covered: Cover the pot and simmer over low heat for 10 minutes, allowing the apples to cook through gently and release their juices.
- Add seasoning and continue simmering: Uncover the pot, stir in the cinnamon and sea salt, then cover again. Continue to simmer for another 10 to 20 minutes, stirring occasionally, until the apples are very tender and beginning to break down.
- Mash the apples: Turn off the heat. Use a potato masher to mash the cooked apples to your preferred consistency. For smoother applesauce, pulse the mixture in a food processor or blend it using an immersion blender.
