- 1 (8-ounce) can tomato sauce
- 1½ cups vegetable broth
Instructions
- Heat the oil and flour: In a small saucepan over medium heat, warm the avocado oil. Add the all-purpose flour and whisk continuously for 1 minute to form a roux, which will help thicken the sauce.
- Add spices: Stir in the chili powder, ground cumin, garlic powder, sea salt, and dried oregano. Whisk together and cook for an additional minute to toast the spices and enhance their flavors.
- Add liquids: Slowly pour in the tomato sauce followed by the vegetable broth while whisking constantly to avoid lumps. Continue whisking until the mixture is smooth and fully combined.
- Simmer to thicken: Reduce the heat to low and let the sauce simmer gently for 12 minutes, stirring occasionally. The sauce will thicken during cooking and will continue to thicken as it cools.
- Finish and use: Once thickened to your liking, remove from heat. The enchilada sauce is now ready to be used in any recipe calling for red enchilada sauce, such as enchiladas or as a flavorful topping or dip.
