- Knead and proof: Transfer the dough to a clean surface and knead by hand for 2 to 3 minutes until smooth. Shape into a ball, place in a large bowl, cover with plastic wrap, and let rise in a warm spot for 60 to 90 minutes, until it roughly doubles in size.
- Shape bagels: Lightly grease two baking sheets and line with parchment paper. Turn dough onto a clean unfloured surface and divide into 8 equal pieces.
