This homemade pickle relish is a sweet and tangy condiment perfect for enhancing the flavors of veggie burgers, hot dogs, and more. Made with fresh vegetables and a blend of vinegar and spices, it provides a crunchy and flavorful topping that can be stored in the refrigerator for up to two weeks.
Ingredients
Vegetables
- ¾ cup diced and seeded cucumber
- ¾ cup diced green bell pepper
- ¼ cup diced white onion
Pickling Liquid and Spices
- ½ cup apple cider vinegar (divided)
- 2 tablespoons cane sugar
- ¾ teaspoon mustard seeds
- ¾ teaspoon sea salt
- ¼ teaspoon red pepper flakes
- ⅛ teaspoon celery seed
Instructions
- Combine Vegetables and Simmer: In a small pot, combine the diced cucumber, green bell pepper, white onion, and ¼ cup of the apple cider vinegar. Bring the mixture to a simmer over medium heat and cook for 10 minutes, stirring occasionally to ensure even cooking. Once done, drain off and discard any excess liquid.
- Add Remaining Ingredients and Simmer: Return the drained vegetables to the pot. Add the remaining ¼ cup apple cider vinegar, cane sugar, mustard seeds, sea salt, red pepper flakes, and celery seed. Continue to simmer the mixture for an additional 5 minutes, allowing the flavors to meld together.
- Cool and Chill: Remove the pot from heat and let the pickle relish cool to room temperature. Once cooled, transfer it to a container and chill in the refrigerator until ready to use. The relish will keep fresh for up to two weeks.
