This homemade pickle relish is a delightful blend of sweet and tangy flavors, perfect for adding a zesty kick to veggie burgers, hot dogs, and sandwiches. Made with fresh cucumbers, bell peppers, and a blend of spices, it's easy to prepare and keeps well in the fridge for up to two weeks.
Ingredients
Vegetables
- ¾ cup diced and seeded cucumber
- ¾ cup diced green bell pepper
- ¼ cup diced white onion
Pickling Liquid & Spices
- ½ cup apple cider vinegar
- 2 tablespoons cane sugar
- ¾ teaspoon mustard seeds
- ¾ teaspoon sea salt
- ¼ teaspoon red pepper flakes
- ⅛ teaspoon celery seed
Instructions
- Combine and Simmer Vegetables: In a small pot, combine the diced cucumber, green bell pepper, white onion, and ¼ cup of the apple cider vinegar. Bring the mixture to a simmer over medium heat and cook for 10 minutes, stirring occasionally to ensure even cooking. After cooking, drain and discard any excess liquid.
- Add Remaining Ingredients and Simmer: Return the vegetables to the pot and add the remaining ¼ cup apple cider vinegar, cane sugar, mustard seeds, sea salt, red pepper flakes, and celery seed. Stir to combine and simmer for an additional 5 minutes, allowing the flavors to meld together.
- Cool and Chill: Remove the pot from heat and let the relish cool to room temperature. Once cooled, transfer to a container, cover, and chill in the refrigerator until ready to use. The relish will keep fresh in the fridge for up to two weeks.
