Ingredients
Beef and Vegetables
- 3-4 lb. chuck roast, cut into 2.5" cubes
- 2 tablespoons extra virgin olive oil
- 1 small yellow onion, finely chopped
- 1/2-1 cup sliced brown mushrooms
- 1 medium carrot, finely chopped
- 2 bay leaves
- 2 tablespoons parsley, chopped
- 2 teaspoons garlic, minced
- Kosher salt, to taste
- Black pepper, to taste
Liquids and Flavorings
- 1-2 tablespoons Worcestershire sauce
- 3 cups liquid beef broth
- 1 cup red wine
Pie Assembly
- 1 egg yolk (for brushing)
- 2 x 9" pie crusts
- 2 x 10" puff pastry sheets
Instructions
- Prepare the Beef: Cut the chuck roast into 2.5-inch cubes and season generously with kosher salt and black pepper. Heat a deep-sided pan over medium-high heat and add olive oil. Brown the beef cubes on all sides to develop color and flavor. Remove the beef and set aside.
- Sauté Aromatics: Lower the heat to medium-low. In the same pan, add the chopped onion and minced garlic, cooking for about 3 minutes to soften and release their aromas in the remaining oil and beef fat.
- Add Vegetables: Add the finely chopped carrot to the pan and cook for an additional 7 minutes until tender.
- Deglaze and Combine: Stir in Worcestershire sauce, then add the beef broth and red wine. Sprinkle flour if desired to thicken. Mix thoroughly to combine and season liberally with salt and pepper to taste.
- Simmer the Filling: Return the browned beef to the pan along with sliced mushrooms, bay leaves, and chopped parsley. Bring the mixture briefly to a boil, then cover and reduce heat to low. Let it simmer gently for 90 minutes until the beef is tender and the sauce is rich.
- Preheat the Oven: Set the oven to 375°F (190°C) in preparation for baking the pie.
- Assemble the Pie: Place the 9-inch pie crusts into two equally sized pie tins. Spoon the cooled beef mixture into the crusts, mounding slightly above the edges.
- Add Puff Pastry Top: Lay a puff pastry sheet over each filled pie. Trim excess pastry and seal the edges using a fork to press them down. Cut four slits evenly spaced on the top to allow steam to escape during baking.
- Egg Wash and Bake: Brush the top of each pie with the egg yolk to create a golden, glossy finish. Bake in the preheated oven for 40 to 45 minutes or until the pastry is puffed and golden brown.
- Rest and Serve: Remove the pies from the oven and let them cool slightly before serving. Enjoy your chunky beef and mushroom pie paired with creamy mashed potatoes and your favorite vegetables.
Notes
- You can substitute chuck roast with beef brisket or stew meat for similar results.
- Adjust the amount of mushrooms according to preference; shiitake or cremini can be used instead of brown mushrooms.
- The Worcestershire sauce adds depth—don’t omit if possible.
- If you prefer a thicker filling, sprinkle 1-2 tablespoons of flour after adding the vegetables and stir well.
- Leftover pie can be refrigerated for up to 3 days and reheated in the oven to maintain crispiness.
- This pie freezes well before baking; cover tightly and bake from frozen, adding extra baking time.
