Popcorn Mixture
- 2 bags natural microwave popcorn, popped
- 1 1/2 cups broken pretzel sticks
- ½ cup roasted peanuts
- ½ cup chocolate chips
- ½ cup butterscotch chips
Marshmallow Sauce
- 7 cups mini marshmallows
- ½ cup butter
- ¼ cup brown sugar
- ½ cup corn syrup
Instructions
- Prepare the pan: Thoroughly grease a bundt pan with cooking spray and set it aside to ensure the cake can be easily removed later.
- Mix dry ingredients: Remove any unpopped kernels from the popcorn, then pour the popcorn into an extra-large bowl. Add the broken pretzel sticks, roasted peanuts, butterscotch chips, and chocolate chips. Toss gently to combine.
- Make marshmallow sauce: In a small saucepan over medium heat, combine the butter, brown sugar, and corn syrup. Stir frequently and bring the mixture to a boil. Let it simmer for 2–3 minutes until it starts to thicken slightly.
- Add marshmallows: Reduce the heat to low, then stir in the mini marshmallows. Continue stirring until the marshmallows melt completely and the mixture becomes smooth.
- Combine mixtures: Pour the hot marshmallow sauce over the popcorn and nut mixture. Use a greased spatula to fold and mix everything until evenly coated with the marshmallow glaze.
- Set the cake: Transfer the coated mixture into the prepared bundt pan. Press down firmly to compact the mixture evenly inside the pan.
- Chill and serve: Allow the cake to set at room temperature for at least 1–2 hours, or place it in the refrigerator to speed up the process. Once fully set and cooled, invert the bundt pan onto a serving plate and carefully slice for serving.
