Instructions

  1. Prepare the Ranchero Sauce: Make the ranchero sauce according to your preferred recipe or use a store-bought version. Warm it until heated through.
  2. Fry the Tortillas: Heat an 8-inch nonstick skillet over medium heat and brush the surface with avocado oil. Place one corn tortilla in the skillet and cook for 15 seconds per side, or until the tortilla puffs slightly and releases a fragrant aroma. Repeat with the remaining tortillas, adding more avocado oil as needed.
  3. Fry the Eggs: In the same skillet or a separate pan, fry the eggs according to your preferred method until the whites are set but yolks remain runny. Season the yolks with sea salt and freshly ground black pepper to taste.
  4. Assemble the Dish: On each plate, place a fried tortilla and spread a layer of warm refried beans on top. Spoon some warm ranchero sauce over the beans, then top with a fried egg.
