Instructions

  1. Sort and Rinse Beans: Place the dried pinto beans in a large colander and carefully sort through them to remove any stones, debris, or damaged beans. Rinse thoroughly under cold running water to clean them before cooking.
  2. Prepare Instant Pot: Transfer the rinsed beans to the Instant Pot. Add 3 cups of water along with the sea salt, chili powder, ground cumin, dried Mexican oregano, and a few grinds of freshly ground black pepper. Secure the Instant Pot lid and ensure the valve is set to the sealing position.
  3. Cook Beans: Set the Instant Pot to Pressure Cook on High for 25 minutes. During this time, the beans will soften and absorb the flavors of the spices.
  4. Natural Pressure Release: When the cooking time is up, allow the Instant Pot to release pressure naturally, which will take about 20 to 30 minutes. Do not manually release pressure to avoid splitting the beans.
  5. Finish and Serve: Once the float valve drops indicating the pressure is fully released, carefully remove the lid. Drain the beans if desired.
