Instructions

  1. Heat Dairy: Add heavy cream and whole milk to a medium-sized saucepan and place over medium heat. Bring the mixture to a simmer, then remove it from the heat.
  2. Mix Egg Yolks and Sugar: In a large bowl, beat the egg yolks and granulated sugar together until the mixture is smooth and airy.
  3. Temper Eggs: Slowly pour a thin stream of the warm cream mixture into the beaten eggs while whisking constantly. This prevents the eggs from curdling and ensures a smooth mixture.
  4. Cook Mixture: Pour the combined mixture back into the saucepan and return it to medium heat. Stir constantly for 4-5 minutes until the mixture starts to thicken but does not boil.
  5. Melt Chocolate: Place the chopped semi-sweet chocolate into a large bowl. Pour the warm thickened cream mixture over the chocolate and let it sit for 1-2 minutes to allow the chocolate to melt.
  6. Finish Pudding: Add the butter, a pinch of salt, and vanilla extract to the melted chocolate mixture. Whisk vigorously until the pudding is smooth and glossy.
