Ingredients
Potatoes
- 1 pound potatoes, peeled and cut into chunks
Dressing
- 2 tablespoons olive oil
- 1 large bunch parsley, chopped
- 1 teaspoon red pepper flakes (optional)
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
Instructions

- Drain and Cool: Drain the potatoes and spread them out to cool completely, approximately 1 hour at room temperature.
- Prepare Dressing: In a separate bowl, whisk together olive oil, chopped parsley, red pepper flakes (if using), kosher salt, and freshly cracked black pepper to create a vibrant dressing.
- Toss Salad: Place the cooled potatoes in a large bowl, pour the dressing over them, and gently toss to combine all the flavors evenly.
- Season and Serve: Adjust seasoning with additional salt and pepper if needed, then serve immediately and enjoy this fresh Italian potato salad.
Notes
- For best results, allow the potatoes to cool completely before adding the dressing to ensure flavors meld well.
- Red pepper flakes add a hint of heat but can be omitted for a milder taste.
- This salad is delicious served slightly chilled or at room temperature.
- Use fresh parsley for the most vibrant flavor.
