Ingredients
Dry Ingredients
- 1 cup raw shelled pistachios
- 1 cup rolled oats
- ½ teaspoon sea salt
- ⅓ cup unsweetened coconut flakes
- Additional handful of chopped pistachios for topping

- ¼ cup maple syrup, plus more for drizzling on top
- 2 tablespoons olive oil
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper, allowing the paper to overhang the sides for easy removal later.
- Process Ingredients: In a food processor fitted with the S blade, combine the pistachios, rolled oats, and sea salt. Pulse for about 30 seconds until the mixture starts to form a coarse meal.
- Add Wet Ingredients: With the food processor running, slowly drizzle in the maple syrup and olive oil. Continue processing until the mixture comes together into a crumbly, slightly moist dough.
- Assemble in Pan: Press the dough evenly into the prepared pan, smoothing the surface. Sprinkle the unsweetened coconut flakes and the chopped pistachios evenly over the top, gently pressing them into the dough.
- Bake: Place the pan in the preheated oven and bake for 10 to 12 minutes or until the coconut turns golden brown and the dough is cooked through but still a bit soft to the touch. Avoid overbaking to keep the squares tender.
- Cool and Cut: Remove from the oven and let it cool completely in the pan. Then, lift the parchment paper to remove the baked slab and cut it into 12 squares using a sharp knife.
- Optional Maple Drizzle and Storage: Drizzle additional maple syrup over the squares for extra sweetness if desired. Store the squares in an airtight container at room temperature for up to one week.
