Ingredients

Instructions
- Prepare the Lemon Butter Sauce: In a small mixing bowl, whisk together the melted unsalted butter, lemon zest, lemon juice, and pressed garlic until well combined to create a flavorful sauce.
- Preheat the Oven: Preheat your oven to 400˚F (204˚C) and line an 11” x 15” jelly roll pan with parchment paper or a silicone liner for easy cleanup.
- First Bake - Root Vegetables: Arrange the diced carrots, sliced white onion, diced red bell pepper, and diced eggplant evenly on the prepared pan. Drizzle half of the lemon butter sauce over the vegetables and sprinkle with salt and pepper to taste. Toss gently to coat all pieces evenly. Bake in the preheated oven for 15-17 minutes to start softening these denser vegetables.
- Add Remaining Ingredients: After the initial bake, add the cherry tomatoes, sliced mushrooms, asparagus pieces, diced zucchini, and the thickly sliced Polska kielbasa or your preferred sausage onto the pan. Pour the remaining lemon butter sauce over the entire mixture and toss everything to ensure all veggies and sausage are well coated with the sauce.
- Final Bake: Return the pan to the oven and bake for an additional 20-30 minutes, or until all vegetables are fork tender and the sausage is heated through and slightly browned. Stir once or twice during baking for even cooking and to redistribute the sauce.
