Instructions
- Preheat Oven: Preheat your oven to 350˚F (175˚C) preparing for baking the cake.
- Cream Butter and Sugar: Using an electric mixer, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.
- Add Cream of Coconut and Eggs: Beat in the cream of coconut until well incorporated. Then add the eggs one at a time, fully mixing each before adding the next.
- Add Extracts, Zest, and Milk: Mix in the coconut extract, lemon extract, vanilla extract, lemon zest, and coconut milk until everything is combined evenly.
- Combine Dry Ingredients: In a separate bowl, whisk together the cake flour, baking powder, baking soda, and salt to ensure an even distribution.
- Incorporate Dry Ingredients: Gradually add the dry ingredients into the wet mixture, mixing gently to combine without overmixing.
