- 2 teaspoons extra-virgin olive oil
- 12 ounces fresh green beans, trimmed
- 3 tablespoons water
Instructions
- Prepare the dressing: In a large bowl, whisk together the lemon juice, grated garlic, Dijon mustard, sea salt, and several grinds of freshly ground black pepper. Stir in the fresh thyme leaves to combine all the flavors well.
- Cook the green beans: Heat the extra-virgin olive oil in a large skillet over medium heat. Add the trimmed green beans and toss them to coat evenly with the oil.
- Steam the green beans: Add the water to the skillet, cover with a lid, and let the beans cook for 5 minutes or until they become tender while retaining a slight bite for texture.
- Toss with dressing and serve: Transfer the cooked green beans to the bowl with the lemon dressing mixture and toss thoroughly to coat. Adjust seasoning as needed, then transfer the green beans to a serving platter, leaving any excess cooking water behind.
