Instructions

  1. Mix butter, sugar, and lemon zest: In a mixing bowl, beat the butter, granulated sugar, and lemon zest with an electric mixer for 1 to 2 minutes until well combined and creamy.
  2. Add lemon juice and egg: Incorporate the fresh lemon juice and egg into the mixture, beating again until fully combined.
  3. Add dry ingredients: Gradually fold in the all-purpose flour, baking soda, and salt using a spatula, mixing by hand until the dough comes together evenly.
  4. Chill dough: Cover the bowl with plastic wrap and refrigerate the dough for 30 to 60 minutes to help achieve thicker, chewier cookies by preventing excessive spreading during baking.
  5. Prepare for baking: Preheat the oven to 350ºF (177ºC). Place ¼ cup of granulated sugar in a small bowl for rolling the cookie dough balls.
