Instructions

  1. Prep and boil potatoes: Peel and chop the russet potatoes into 1-inch chunks. Place them in a large pot and add cold water until it covers the potatoes by about 1 inch. Bring the water to a boil over medium-high heat and cook the potatoes until they are easily pierced with a butter knife, approximately 15-20 minutes.
  2. Drain and mash: Drain the cooked potatoes well and transfer them to a large mixing bowl. Add the softened cream cheese, sour cream, softened butter, milk, and garlic powder.
  3. Mix until smooth: Using a hand mixer on medium speed, blend the ingredients together until the potatoes are smooth and fluffy. Be careful not to over-mix to avoid a gummy texture.
  4. Season and prepare for chilling: Season the mashed potatoes with kosher salt and freshly ground black pepper to taste. Mix once more to incorporate the seasoning evenly.
  5. Transfer and chill: Grease a 9x13-inch baking dish with butter or nonstick spray. Transfer the mashed potatoes into the dish, smoothing the top. Cover the dish tightly with foil and refrigerate if not baking immediately, for up to 2 days.
