Ingredients
Chicken
- 4 boneless, skinless chicken breasts
Cheese
- 1½ cups freshly grated Parmesan cheese, divided
Seasoning
- ½ teaspoon freshly ground black pepper
Sauce
- 1 cup Caesar salad dressing
- ½ cup sour cream, room temperature (optional)
Instructions
- Prep the oven and pan: Preheat your oven to 375°F (190°C) and lightly spray an 8×11½-inch baking pan with nonstick spray to prevent sticking.
- Even out the chicken thickness: If your chicken breasts vary in thickness, place them inside a Ziplock bag and gently pound them to an even thickness of about ¾ to 1 inch using a meat pounder or rolling pin. This helps them cook evenly.
- Season the chicken: Sprinkle both sides of the chicken breasts with 1 cup of the freshly grated Parmesan cheese and all of the freshly ground black pepper. Arrange the coated breasts in the prepared baking dish in a single layer.
- Make the creamy sauce: In a small bowl, whisk together the Caesar salad dressing and sour cream until smooth and well combined. Pour this mixture evenly over each chicken breast, making sure they are fully coated.
- Top with Parmesan: Sprinkle the remaining ½ cup of Parmesan cheese over the top of the coated chicken breasts to add a lovely cheesy crust when baked.
- Bake the chicken: Place the baking dish in the preheated oven and bake for 30 minutes. Check doneness by inserting an instant-read meat thermometer into the thickest part of one of the middle breasts; it should read around 150°F (66°C) at this stage.
- Broil for color: Switch your oven to broil and place the chicken breasts under the broiler for an additional 2 to 4 minutes. Watch closely to achieve a golden brown top without burning. The final internal temperature of the chicken should reach 165°F (74°C).
- Rest the chicken: Remove the chicken from the oven and loosely cover with foil. Let it rest for 5 to 10 minutes to allow the juices to redistribute for a moist result.
- Serve and garnish: Optionally garnish with chopped fresh parsley and serve your melt-in-your-mouth Caesar chicken hot for a flavorful and satisfying meal.
Notes
- Storage: Keep leftover chicken in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
- Use an instant-read thermometer for precise checking of chicken doneness for safety and juiciness.
- For even cooking, pound chicken breasts to uniform thickness before baking.
- Broil carefully as the cheese topping can burn quickly.
- Sour cream is optional but adds extra creaminess and tang to the sauce.
