Instructions

  1. Prep the oven and pan: Preheat your oven to 375°F (190°C) and lightly spray an 8×11½-inch baking pan with nonstick spray to prevent sticking.
  2. Even out the chicken thickness: If your chicken breasts vary in thickness, place them inside a Ziplock bag and gently pound them to an even thickness of about ¾ to 1 inch using a meat pounder or rolling pin. This helps them cook evenly.
  3. Season the chicken: Sprinkle both sides of the chicken breasts with 1 cup of the freshly grated Parmesan cheese and all of the freshly ground black pepper. Arrange the coated breasts in the prepared baking dish in a single layer.
  4. Make the creamy sauce: In a small bowl, whisk together the Caesar salad dressing and sour cream until smooth and well combined. Pour this mixture evenly over each chicken breast, making sure they are fully coated.
  5. Top with Parmesan: Sprinkle the remaining ½ cup of Parmesan cheese over the top of the coated chicken breasts to add a lovely cheesy crust when baked.
  6. Bake the chicken: Place the baking dish in the preheated oven and bake for 30 minutes. Check doneness by inserting an instant-read meat thermometer into the thickest part of one of the middle breasts; it should read around 150°F (66°C) at this stage.
