These Mini Chicken Pot Pies are a delightful comfort food perfect for a quick and easy meal. Featuring a creamy chicken and mixed vegetable filling baked inside buttery biscuit dough, they’re golden, hearty, and perfect for any day you crave a warm, savory bite.
Ingredients
Filling
- 3/4 cup chopped leftover chicken, or 1 small fresh chicken breast, fully cooked
- 1 can cream of chicken soup
- 1 cup mixed frozen vegetables (peas, carrots, corn, and green beans), defrosted
Dough
- 1 package refrigerated biscuit dough
Instructions
- Preheat Oven: Preheat your oven to 375°F to ensure it's at the perfect temperature for baking your mini pot pies.
- Prepare Filling: In a medium bowl, combine the chopped chicken, defrosted mixed vegetables, and the can of cream of chicken soup. Stir thoroughly to create a creamy, well-mixed filling.
- Prepare Dough in Muffin Tin: Separate each biscuit from the package and place each into the compartments of a greased muffin tin. Using your fingers, press the dough from the center upwards along the sides of each muffin cup as high as possible to form a crust shell.
- Fill the Cups: Spoon approximately 2 tablespoons of the chicken and vegetable filling into each dough-lined muffin cup, distributing the filling evenly among all pies.
- Bake: Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until the biscuit crust turns golden brown and the filling is bubbly and hot.
- Serve: Carefully remove the mini pot pies from the tin once cooled slightly. Serve warm and enjoy a comforting meal in bite-size portions.
Notes
- You can substitute refrigerated biscuit dough with refrigerated crescent roll dough for a different texture; biscuit dough yields a salty, firm crust, while crescent roll dough provides a sweeter, softer crust.
- Ensure vegetables are well defrosted to avoid excess moisture in the filling.
- Leftover cooked chicken works great for saving time and adding flavor.
- Greasing the muffin tin well helps prevent sticking and makes removing pies easier.
