Description

New Mexican Sopapilla Pie is a delicious layered dessert featuring a flaky crescent roll crust, a creamy sweetened cream cheese filling, and a cinnamon-sugar butter topping drizzled with honey. This easy-to-make pie combines the warm flavors of cinnamon and honey with a luscious cream cheese layer, baked to golden perfection and chilled before serving.

Ingredients

Crust and Filling

  • 2 (8 oz) tubes refrigerated crescent rolls
  • 2 (8 oz) packages cream cheese, room temperature
  • 3/4 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract

Topping

  • 3/4 cup granulated sugar (for topping)
  • 1/2 cup butter, room temperature
  • 1 teaspoon ground cinnamon
  • 1/3 cup honey

Instructions

  1. Preheat and prepare dish: Preheat the oven to 350º F (175º C). Lightly grease a 9x13-inch baking dish with non-stick spray to prevent sticking.
  2. Make the crust base: Unroll 1 tube of refrigerated crescent roll dough into the prepared baking dish. Pinch together the seams carefully so it forms a uniform, even crust layer covering the bottom of the dish.
  3. Prepare the cream cheese filling: In a large bowl, beat the cream cheese for 3-4 minutes until fluffy. Then blend in 3/4 cup granulated sugar and 1 teaspoon vanilla extract until fully combined and smooth.
  4. Layer the filling: Spread the cream cheese mixture evenly over the crust layer, making sure it reaches all the edges for an even layer.
  5. Add the top crust: Open the second tube of crescent roll dough and gently place it over the cream cheese layer. Press the seams together gently again to seal and create the top crust.
  6. Prepare the topping: In a small bowl, crumble together the room temperature butter, 3/4 cup granulated sugar, and ground cinnamon using a fork until combined and crumbly.
  7. Sprinkle topping and bake: Evenly sprinkle the cinnamon-sugar-butter mixture over the top crust. Bake in the preheated oven for 30-35 minutes or until the top crust is golden brown and cooked through.
  8. Finish and chill: Remove the pie from the oven and immediately drizzle the 1/3 cup honey evenly over the top. Allow to cool slightly, then refrigerate the pie for at least 1-2 hours before serving to set the layers and flavors.

Notes

  • Make sure the cream cheese is at room temperature for easy mixing and a smooth filling.
  • Pinch the crescent roll seams well to avoid gaps where filling might leak.
  • Allow the pie to chill thoroughly to improve texture and slice cleanly.
  • Use pure honey for the best authentic flavor and drizzle it evenly after baking.
