Ingredients

Meat and Sauce

  • 1 tablespoon olive oil
  • 1/2 lb lean ground beef
  • 2 cloves garlic, minced
  • 3 cups marinara sauce
  • 1 cup water
  • 1/2 teaspoon Italian seasoning
  • Kosher salt and freshly ground black pepper, to taste

Pasta

  • 9 lasagna noodles (not the no-boil variety), broken into 2-inch pieces

Cheeses

  • 1 cup ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1 cup grated mozzarella cheese


Instructions

  1. Brown the beef: In a large skillet, heat olive oil over medium-high heat. Add the lean ground beef, season with salt and pepper, and cook, breaking it up with a spoon, until fully browned and cooked through.
  2. Add garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, taking care not to burn the garlic.
  3. Combine sauce and noodles: Pour in the marinara sauce, water, and Italian seasoning, stirring to combine. Add the broken lasagna noodles, stirring well to ensure noodles are coated and submerged in the sauce.
  4. Simmer noodles: Bring the mixture to a boil, then reduce heat to a simmer and cover the skillet. Let the noodles cook, stirring occasionally, until they are tender and most of the liquid is absorbed, about 15 minutes. Add more water if the mixture becomes too dry before noodles are cooked through.
  5. Prepare cheese mixture: While noodles cook, mix ricotta and Parmesan cheese in a small bowl. Season with salt and pepper to taste.
  6. Top with cheeses: Once noodles are tender, remove lid and dollop the ricotta mixture evenly on top. Sprinkle grated mozzarella cheese over the ricotta.
  7. Melt and brown cheese: Cover the skillet and let it rest off the heat for about 5 minutes to let the cheeses melt. Alternatively, for a golden-brown top, place the uncovered skillet under a preheated oven broiler briefly until cheese is bubbly and browned.
