Description

This One-Pot Ground Beef Stroganoff is a hearty and comforting dish that combines tender ground beef, sautéed mushrooms, and egg noodles in a creamy, flavorful sauce. Perfect for a quick weeknight dinner, this recipe uses simple ingredients and minimal cleanup, making it both delicious and convenient.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • 1/2 medium white onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced

Seasonings and Flavorings

  • 1/2 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • Kosher salt and freshly ground black pepper, to taste

Cooking Ingredients

  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 8 oz wide egg noodles
  • 1/2 cup sour cream

Instructions

  1. Brown the Ground Beef and Sauté Vegetables: In a skillet over medium-high heat, season the ground beef with salt and pepper. Cook it, breaking apart as it browns. When it is nearly cooked through, add the chopped onion, minced garlic, sliced mushrooms, and dried thyme. Continue cooking for 5-7 minutes until the vegetables are tender. Remove this mixture to a plate and set aside.
  2. Make the Roux: In the same skillet, add the butter and let it melt. Stir in the all-purpose flour and cook for 1-2 minutes while stirring constantly to form a roux, which will thicken the sauce.
  3. Add Broth and Noodles: Pour in the beef broth and Worcestershire sauce, stirring to combine with the roux. Add the wide egg noodles, bring the mixture to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, for 8-10 minutes until the noodles are tender but still al dente.
  4. Combine All Ingredients: Return the beef and vegetable mixture to the skillet. Stir in the sour cream until evenly mixed. Taste and adjust seasoning with salt and freshly ground black pepper as needed.
  5. Serve: Once everything is heated through and combined, serve the stroganoff hot and enjoy the rich and creamy flavors of this comforting one-pot meal.

Notes

  • For a lighter version, substitute sour cream with Greek yogurt.
  • You can use button or cremini mushrooms if preferred.
  • Make sure to stir frequently when cooking noodles to prevent sticking.
  • Leftovers keep well in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed.
