- 1 ½ lbs ground beef

Instructions
- Heat the oil and brown the beef: Heat 2 teaspoons of canola oil in a large stockpot over medium-high heat. Add 1 ½ lbs of ground beef and cook for 2 minutes to start browning. Reduce heat to medium and cook for an additional 6-8 minutes until the beef is fully browned and no longer pink.
- Sauté the vegetables: Add the diced white onion and orange bell pepper to the pot. Cook for about 8 minutes until the vegetables soften and become fragrant. Stir occasionally to prevent sticking.
- Add garlic and spices: Stir in the minced garlic, 2 tablespoons tomato paste, 1 tablespoon chili powder, 2 teaspoons ground cumin, 1 teaspoon dried oregano, ½ teaspoon cayenne pepper, salt, and black pepper. Cook the mixture for 1 minute to toast the spices and release their aroma.
- Add remaining ingredients: Pour in 1 (15 oz) can of crushed tomatoes, 3 (15 oz) cans of drained kidney beans, 1 tablespoon honey, 1 cup vegetable or beef broth, as well as the zest and juice from 2 Valencia oranges. Stir everything thoroughly to combine all the flavors.
- Simmer the chili: Cover the pot and let the chili simmer on low heat for 20-30 minutes. This allows the flavors to meld together and the chili to thicken slightly. Stir occasionally and taste to adjust seasoning with more salt and pepper if needed.
