Ingredients

Blondies:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups packed light brown sugar
  • 8 tablespoons unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 3 teaspoons vanilla extract
  • 1/2 cup creamy peanut butter

Topping:

  • 1/3 cup peanut butter
  • 1/3 cup grape, raspberry, or strawberry jelly


Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Spray an 8x8-inch baking pan with non-stick spray, then line it with foil leaving two ends extending over the edges of the pan to create a sling. Spray the foil again to prevent sticking and set aside.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this dry mixture aside.
  3. Combine Sugar and Butter: In a separate large bowl, whisk the packed light brown sugar with the melted and cooled unsalted butter until fully combined and smooth.
  4. Add Eggs and Flavor: Add the eggs, one at a time, whisking thoroughly after each addition to incorporate completely. Then whisk in the vanilla extract followed by the 1/2 cup of creamy peanut butter until evenly mixed.
  5. Fold in Dry Ingredients: Using a rubber spatula, gradually fold the dry flour mixture into the wet ingredients until just combined, being careful not to overmix.
  6. Spread Batter: Evenly spread the blondie batter into the prepared baking pan, smoothing the top gently.
  7. Prepare Topping: Microwave 1/3 cup peanut butter in a small bowl and 1/3 cup of your chosen jelly in a separate small bowl for about 10 to 15 seconds until each is smooth and easy to spoon but not runny.
