  • 1 garlic clove, peeled and smashed
  • ¾ cup distilled white vinegar
  • ¾ cup water

Instructions

  1. Prepare the Peppers and Garlic: Thinly slice 15 serrano peppers carefully, preferably wearing gloves to avoid skin irritation. Peel and smash 1 garlic clove. Place both the sliced peppers and garlic clove into a clean 16-ounce or similar lidded jar.
  2. Make the Brine: In a small saucepan, combine ¾ cup distilled white vinegar, ¾ cup water, ¼ cup cane sugar, and 2 teaspoons sea salt. Heat over medium heat, stirring frequently until the sugar and salt are fully dissolved, which should take about 1 minute.
  3. Combine and Cool: Pour the hot brine mixture over the serranos and garlic in the jar, making sure the peppers are fully submerged. Allow the jar to cool to room temperature.
  4. Chill and Pickle: Once cooled, cover the jar with its lid and refrigerate for at least 30 minutes before using to allow the flavors to meld.
  5. Storage: Store the pickled serrano peppers in the refrigerator. They will keep well for up to 2 weeks, developing more flavor as time passes.
