Ingredients

Egg Mixture

  • 3 large eggs, yolks and whites separated and room temperature
  • 6 tablespoons packed light brown sugar

Dry Ingredients

  • 1 cup ground almonds or almond flour
  • 1/2 cup finely chopped pistachios

Wet Ingredients

  • 1 cup white chocolate, melted
  • 1/2 cup olive oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 1 drop green food gel (optional)

For Garnish

  • Powdered sugar
  • Optional: chopped pistachios and melted chocolate


Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Spray an 8-inch cake pan with baking spray and line the bottom with parchment paper to ensure the cake does not stick.
  2. Whip egg whites: In a clean, dry bowl, whip the egg whites until stiff peaks form. Set this aside carefully to maintain the airy texture.
  3. Mix egg yolks and sugar: In another bowl, whip the egg yolks for about 1 minute. Gradually add the brown sugar while continuing to whip until the mixture is glossy, larger in volume, and fluffy.
  4. Add melted chocolate and oil: Slowly incorporate the melted white chocolate and oil into the yolk-sugar mixture, whipping until fully combined. Stir in the vanilla extract for added flavor.
  5. Combine dry ingredients: Gently fold in the almond flour and finely chopped pistachios to the wet mixture. If using green food gel, add it now to enhance color.
  6. Fold in egg whites: Carefully fold the whipped egg whites into the batter to maintain maximum airiness. Stop folding once there are no large streaks of egg whites or pistachio mixture visible.
  7. Bake the cake: Pour the batter into the prepared pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cake: Let the cake cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
  9. Garnish and serve: Before serving, dust the cake with powdered sugar. Optionally, enhance presentation with chopped pistachios and drizzled melted chocolate. Enjoy!
