Ingredients
Egg Mixture
- 3 large eggs, yolks and whites separated and room temperature
- 6 tablespoons packed light brown sugar
Dry Ingredients
- 1 cup ground almonds or almond flour
- 1/2 cup finely chopped pistachios

- 1 cup white chocolate, melted
- 1/2 cup olive oil or vegetable oil
- 1 teaspoon vanilla extract
- 1 drop green food gel (optional)

- Powdered sugar

Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Spray an 8-inch cake pan with baking spray and line the bottom with parchment paper to ensure the cake does not stick.
- Whip egg whites: In a clean, dry bowl, whip the egg whites until stiff peaks form. Set this aside carefully to maintain the airy texture.
- Mix egg yolks and sugar: In another bowl, whip the egg yolks for about 1 minute. Gradually add the brown sugar while continuing to whip until the mixture is glossy, larger in volume, and fluffy.
- Add melted chocolate and oil: Slowly incorporate the melted white chocolate and oil into the yolk-sugar mixture, whipping until fully combined. Stir in the vanilla extract for added flavor.
- Combine dry ingredients: Gently fold in the almond flour and finely chopped pistachios to the wet mixture. If using green food gel, add it now to enhance color.
- Fold in egg whites: Carefully fold the whipped egg whites into the batter to maintain maximum airiness. Stop folding once there are no large streaks of egg whites or pistachio mixture visible.
- Bake the cake: Pour the batter into the prepared pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake: Let the cake cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
