Ingredients

Dry Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons light brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves

Wet Ingredients

  • 1 cup buttermilk, at room temperature
  • 1/2 cup canned pumpkin (not pumpkin pie filling)
  • 1 large egg, at room temperature
  • 2 tablespoons melted butter, at room temperature
  • 1 teaspoon pure vanilla extract

For Serving

  • Butter
  • Maple syrup


Instructions

  1. Preheat Griddle: Preheat an electric griddle to 350°F (175°C) or heat a large skillet on the stovetop over medium heat.
  2. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, light brown sugar, baking powder, kosher salt, cinnamon, nutmeg, ground ginger, and ground cloves. Set aside.
  3. Mix Wet Ingredients: In a medium bowl, whisk together the buttermilk, canned pumpkin, egg, melted butter, and vanilla extract until smooth and well combined.
  4. Make the Batter: Add the wet ingredients to the dry ingredients and stir gently until just combined. The batter will be thick; avoid overmixing. If you prefer thinner pancakes, add a little more buttermilk.
  5. Prepare Cooking Surface: Lightly coat the preheated griddle or skillet with nonstick cooking spray or a small amount of butter.
  6. Cook Pancakes: Pour about 1/3 cup of batter onto the hot griddle or skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Carefully flip and cook the other side for another 2-3 minutes until golden brown and cooked through.
  7. Serve: Serve the pancakes warm with butter and maple syrup, or your preferred toppings.
