The chips are added just before serving to maintain their crispness, delivering a delightful combination of textures and vibrant flavors.
Ingredients
Salsa and Base
- 1 (16-ounce) jar tomatillo salsa, or 2 cups homemade Tomatillo Salsa Verde
- 1 cup water or vegetable broth
Tortilla Chips
- 6 ounces thick tortilla chips, about 4 handfuls (preferably El Milagro brand)
Toppings and Garnishes
- Cilantro Lime Crema, for drizzling
- 4 fried eggs
- 1 avocado, sliced
- 2 radishes, thinly sliced
- ½ jalapeño pepper, thinly sliced
- Cotija cheese, for sprinkling
- Fresh cilantro leaves
- Sea salt and freshly ground black pepper, to taste
Instructions
- Prepare the Salsa: Pour the tomatillo salsa and water (or vegetable broth) into a large skillet. Place over medium heat and bring to a simmer, stirring occasionally. Let it cook for 5 to 10 minutes until the sauce slightly thickens, enhancing the flavor and consistency.
- Toss the Chips: Add the thick tortilla chips to the skillet with the simmering salsa verde. Gently fold the chips into the sauce to coat them evenly, but be careful not to let them sit too long to avoid sogginess.
- Remove from Heat and Garnish: Take the skillet off the heat. Drizzle cilantro lime crema over the coated chips, then top with fried eggs, sliced avocado, thinly sliced radishes, and jalapeño slices. Sprinkle generously with Cotija cheese and fresh cilantro leaves. Season with sea salt and freshly ground black pepper to taste.
- Serve Immediately: Serve the chilaquiles hot with extra cilantro lime crema on the side to add more creaminess and zest with every bite.
Notes
- For best texture, add tortilla chips to the salsa just before serving to keep them crisp.
- Homemade salsa verde can be used as a fresher alternative to store-bought tomatillo salsa.
- You can substitute vegetable broth for water to add more depth of flavor to the sauce.
- Adjust jalapeño slices based on your preferred spice level or omit for a milder dish.
- Cilantro lime crema can be made by combining sour cream, lime juice, chopped cilantro, and a pinch of salt.
- This dish is highly customizable; consider adding shredded chicken or beans for extra protein.
