  • 1 heaping teaspoon coriander seeds

Brine

  • 1 cup distilled white vinegar
  • 1 cup water
  • 2 tablespoons cane sugar
  • 1 tablespoon sea salt


Instructions

  1. Prepare the Jars and Carrots: Divide the carrot sticks evenly between two 16-ounce jars or three 10-ounce jars. Add the halved garlic cloves and black peppercorns equally into each jar.
  2. Toast the Spices: Heat a medium saucepan over medium-low heat. Add the cumin and coriander seeds and toast them, stirring frequently, for 30 seconds to 1 minute until fragrant. Distribute the toasted spices evenly among the jars.
  3. Make the Brine: In the same saucepan, combine the distilled white vinegar, water, cane sugar, and sea salt. Heat over medium heat, stirring continuously until the sugar and salt are fully dissolved, which takes about 1 minute.
  4. Pour the Brine Over Carrots: Pour the hot brine mixture over the carrots and other contents in each jar, ensuring the vegetables are fully submerged.
  5. Cool and Refrigerate: Allow the jars to cool to room temperature. Once cooled, cover them with lids and place them in the refrigerator.
  6. Ready to Enjoy: The pickled carrots are best after at least three days of refrigeration but can be safely stored and enjoyed for up to two weeks.
