  • 2 - 15 oz. cans red beans, drained
  • 1 - 15 oz. can crushed tomato
  • 1 1/2 cups white rice
  • 1 quart chicken broth
  • 1 cup green onion, sliced
  • 1 bottle hot sauce (Crystal preferred)

  • 2 tablespoons Cajun seasoning
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste


Instructions

  1. Cook the Sausage: In a heavy-bottomed pot over medium heat, add the olive oil and cubed smoked sausage. Cook for 8 to 10 minutes until the sausage is deeply caramelized and browned to develop rich flavor.
  2. Sauté the Vegetables: Add the diced celery, green bell pepper, onion, and minced garlic to the pot with the sausage. Continue cooking for 6 to 8 minutes until the vegetables soften and become fragrant.
  3. Add Beans, Tomato, Rice, and Spices: Stir in the drained red beans, crushed tomato, white rice, Cajun seasoning, smoked paprika, dried oregano, and chicken broth. Bring the mixture to a boil, stirring occasionally.
  4. Simmer the Jambalaya: Once boiling, reduce the heat immediately to a simmer. Season with salt and pepper to taste, cover the pot, and let cook gently for 13 to 15 minutes until the rice is tender and has absorbed most of the liquid.
  5. Rest the Dish: Remove the pot from heat and keep covered for 5 minutes. This allows the flavors to meld and the rice to finish steaming perfectly.
