Description

Ingredients

Pie and Filling

  • 1 frozen pie crust
  • 1 bunch asparagus, ends trimmed and cut into 3-inch bias pieces
  • 1 tablespoon olive oil
  • 2/3 cup ricotta cheese
  • 1 cup white cheddar cheese, grated
  • 1/4 cup Parmigiano cheese, finely grated
  • 1/2 teaspoon kosher salt
  • 2 eggs, beaten


Instructions

  1. Preheat and Prepare Crust: Preheat oven to 400°F. Thaw the frozen pie crust while oven is heating. Use a fork to poke air vents all over the crust.
  2. Par-bake Crust: Follow manufacturer's instructions to par-bake the crust until it’s slightly golden. Let it cool slightly. Then reduce oven temperature to 350°F.
  3. Make Cheese Mixture: In a bowl, combine ricotta, grated cheddar, parmigiano, kosher salt, pepper, and the beaten eggs thoroughly. Set aside this creamy filling.
  4. Sauté Asparagus: Heat olive oil in a sauté pan over medium heat. Add asparagus pieces and cook for 3 to 4 minutes until vibrant green and slightly tender. Remove from heat.
  5. Assemble Pie: Spread the cheese and egg filling evenly over the par-baked crust using a spatula. Arrange the sautéed asparagus pieces on top in a decorative design as you prefer.
  6. Bake the Pie: Place the assembled pie in the oven and bake at 350°F for 40 to 42 minutes, or until the center is set and the pie is cooked through.
  7. Cool and Serve: Remove the pie from the oven and let it cool before slicing. Serve warm or at room temperature.
