Ingredients
Beets
- 4 to 5 medium golden beets
- Extra-virgin olive oil, for drizzling
- Sea salt, to taste
- Freshly ground black pepper, to taste
Lemon Vinaigrette
- ¾ teaspoon ground coriander
- ½ teaspoon honey
- ¼ teaspoon ground cumin
- Juice of 1 lemon (approx. 2 tablespoons)
- ¼ cup extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
Salad
- 2 cups arugula
- ¼ cup crumbled feta cheese
- 2 tablespoons chopped toasted pistachios
- Microgreens, optional
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting the beets.
- Prepare the Beets for Roasting: Rinse and pat dry each beet. Place each beet on a separate piece of aluminum foil, drizzle generously with extra-virgin olive oil, and season with sea salt and freshly ground black pepper. Wrap each beet securely in the foil to seal in moisture during roasting.
- Roast the Beets: Place the wrapped beets on a baking sheet and roast in the preheated oven for 40 to 90 minutes depending on size and freshness, until they are soft and a fork easily pierces through.
- Cool and Peel the Beets: Remove the beets from the oven and unwrap them carefully. Allow them to cool to a comfortable handling temperature. Once cooled, peel the skins off by holding beets under running water and sliding the skins away with your hands.
- Slice and Chill: Cut the peeled beets into halves, quarters, or bite-sized pieces based on preference. Place the sliced beets into the refrigerator until ready to use to maintain freshness.
- Make the Lemon Vinaigrette: In a small bowl, whisk together lemon juice, ground coriander, honey, ground cumin, and olive oil. Season with salt and freshly ground black pepper to taste. Omit thyme if following the referenced recipe strictly.
- Assemble the Salad: On a serving platter, arrange the chilled roasted beets and fresh arugula. Sprinkle the crumbled feta cheese and toasted chopped pistachios evenly over the top.
- Dress and Serve: Drizzle the lemon vinaigrette over the assembled salad. Add additional salt and pepper if needed. Garnish with microgreens if desired and serve immediately.
Notes
- Roasting time varies significantly depending on beet size; check doneness by piercing with a fork.
- Peeling beets under running water makes skin removal easier and less messy.
- To toast pistachios, briefly heat them in a dry skillet over medium heat until fragrant and lightly browned.
- This salad pairs well with grilled meats or can be served as a vegetarian main course.
- Leftover roasted beets can be stored in an airtight container in the refrigerator for up to 5 days.
