  • 3 tablespoons olive oil, plus extra for drizzling

Instructions

  1. Prepare Ingredients: Drain and rinse the canned chickpeas thoroughly to remove excess liquid and improve texture. Peel the garlic clove, and measure out the olive oil, white vinegar, tahini, and water.
  2. Blend the Hummus: Add chickpeas, 3 tablespoons olive oil, white vinegar, tahini, garlic clove, water, and kosher salt into a high-speed food processor. Process the mixture until smooth and creamy, using a rubber spatula to scrape down the sides as needed to ensure even blending.
  3. Transfer and Garnish: Spoon the hummus into a serving bowl, spreading it evenly and creating small craters or wells on the surface for the olive oil to pool. Drizzle extra olive oil over the top and sprinkle with flaky salt for added texture and flavor.
  4. Chill: Cover the bowl and refrigerate the hummus for at least 20 minutes to allow the flavors to meld and the dip to firm up slightly before serving.
