Ingredients
Oat and Whiskey Mixture

- 3 tablespoons Scotch whiskey (divided, use 1 tablespoon for raspberry mix and 2 tablespoons for whipped cream)
Raspberry Mixture
- 2 cups (about 12 ounces) fresh raspberries
- 1 tablespoon honey
- 1 tablespoon Scotch whiskey
- 2 teaspoons granulated sugar
Whipped Cream Mixture
- 2 cups heavy cream
- 2 tablespoons honey
- 2 tablespoons Scotch whiskey
Instructions
- Soak Oats: In a small bowl, combine 1/3 cup toasted oats with 1/3 cup Scotch whiskey. Stir well, cover with plastic wrap, and refrigerate overnight to allow the oats to absorb the whiskey and soften.
- Prepare Raspberry Mixture: In another bowl, roughly mash the fresh raspberries until broken up but still chunky. Add 1 tablespoon Scotch whiskey, 1 tablespoon honey, and 2 teaspoons granulated sugar. Stir gently to combine and set aside.
- Whip Cream: In a third bowl, whip the heavy cream until it begins to form soft peaks. Add the remaining 2 tablespoons honey and 2 tablespoons Scotch whiskey, then continue whipping until stiff peaks form, ensuring the cream is light and airy.
- Fold Oats into Cream: Gently fold the whiskey-soaked oats into the whipped cream mixture, distributing them evenly without deflating the cream.
- Assemble Parfaits: Into serving glasses, layer first a spoonful of the raspberry mixture at the bottom, then add a layer of the whipped cream and oat mixture. Sprinkle some of the reserved 1/4 cup toasted oats over the cream layer. Repeat layering once or twice more, finishing with a garnish of toasted oats on top.
- Serve Immediately: Serve the assembled cranachan parfaits right away for best texture and flavor. While components can be prepared in advance, assembly should be done just before serving to maintain freshness.
