Description

This Skinny Lemongrass Mojito is a refreshing, low-calorie twist on the classic mojito, combining fragrant lemongrass, fresh mint, and basil with lime juice and white rum. Lightly sweetened with Truvia Natural Sweetener and topped with sparkling water, this cocktail is perfect for a healthy, flavorful summer drink.


Ingredients

Herbs and Flavors

  • 2 lemongrass stalks, extra pieces for garnish
  • Big handful of mint (about 15 mint leaves), plus 2 sprigs for garnish
  • 8 basil leaves, chopped

Sweeteners and Liquids

  • 2 teaspoons Truvia Natural Sweetener
  • 5 tablespoons fresh lime juice, plus 2 slices for garnish
  • 6 tablespoons white rum (3 ounces)
  • ½ cup sparkling water, more as needed

Instructions

  1. Prepare the Lemongrass: Cut off the root end and the tough upper stem of the lemongrass stalks. Peel off the tough outer layers to reveal the tender, pale lower sections. Using the back of a chef’s knife, bash the inner leaves to release their oils for enhanced fragrance and flavor. Finely chop the prepared lemongrass to yield about 3 tablespoons.
  2. Muddle the Ingredients: In a cocktail shaker, combine the chopped lemongrass, mint leaves, chopped basil, and Truvia Natural Sweetener. Use a cocktail muddler or the back of a large spoon to muddle the mixture thoroughly, releasing the flavors.
  3. Add Liquids and Shake: Add the fresh lime juice, white rum, and a handful of ice to the muddled mixture. Shake well to mix and chill the ingredients thoroughly.
  4. Prepare Glasses and Serve: Fill two glasses with crushed ice. Strain the cocktail mixture evenly into the glasses, adding a small spoonful of the muddled herbs into each. Top off with sparkling water to taste. Garnish each glass with a sprig of mint and a 4-inch piece of lemongrass stalk for a decorative finish.
