Instructions
- Brown the Sausage: Place a large skillet over medium heat and add the ground Italian sausage. Break the sausage into small pieces and cook until it is mostly browned. This step ensures the meat is partially cooked and releases excess fat, which should then be drained off before adding to the slow cooker.
- Combine Ingredients in Slow Cooker: Transfer the browned sausage to the slow cooker. Add the chopped carrots, celery, diced onion, diced bell pepper, diced zucchinis, drained diced tomatoes, drained and rinsed cannellini beans, chicken or vegetable broth, garlic powder, Italian seasoning, red pepper flakes, salt, and black pepper. Stir all ingredients thoroughly to combine.
- Cook the Soup: Cover the slow cooker with its lid. Set to high heat and cook for 4-5 hours, or alternatively cook on low heat for 6-8 hours. This slow cooking process allows the flavors to meld and the vegetables to become tender.
