- Prepare the Vegetables: In a large bowl, combine the shredded carrots, thinly sliced serrano or jalapeño pepper, finely chopped onion, and kosher salt. Mix everything well to evenly distribute the salt, which helps draw out moisture from the vegetables.
- Drain Excess Moisture: Transfer the mixed vegetables to a colander. Allow them to rest for about 15 minutes so they can release their excess liquid, which enhances the texture of the pickled carrots.
- Make the Pickling Brine: In a saucepan, add the sugar, distilled white vinegar, and rice wine vinegar. Bring this mixture to a boil, ensuring sugar dissolves completely, then remove from heat and let it steep for 5 minutes to mellow the flavors.
