Ingredients
For the crust and crumb topping:
- ½ cup unsalted butter, melted and cooled to room temperature
- ½ cup light brown sugar
- 1.5 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
For the filling:
- 1 cup strawberry pie filling (or any pie filling of your choice)
- ½ cup sour cream
- ¼ cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 egg
- ½ teaspoon vanilla extract
Instructions
- Prepare the pan: Grease an 8-inch square pan on the sides and bottom or line it with parchment paper. Set it aside for later use.
- Preheat the oven: Set the oven temperature to 375 degrees Fahrenheit (190 degrees Celsius) to preheat.
- Make the crust and crumb topping: In a medium mixing bowl, whisk together 1.5 cups flour, ½ cup light brown sugar, ½ teaspoon baking soda, ½ teaspoon baking powder, and ¼ teaspoon salt. Add the melted butter and stir until a dough forms. Reserve about ¾ cup of this mixture to use as the crumb topping later. Press the remaining dough evenly into the bottom of the prepared pan to form the crust. Set aside.
- Prepare the sour cream filling: In a large mixing bowl, combine the sour cream, granulated sugar, 1 tablespoon flour, egg, and vanilla extract. Mix together until fully combined and smooth.
- Assemble the bars: Pour the sour cream filling evenly over the crust in the pan. Spoon the strawberry pie filling evenly on top of the sour cream layer. Using a spoon, gently swirl the pie filling slightly into the sour cream layer for a marbled effect.
- Add the crumb topping: Sprinkle the reserved crumb topping mixture evenly over the top of the assembled fillings.
