Ingredients

For the crust and crumb topping:

  • ½ cup unsalted butter, melted and cooled to room temperature
  • ½ cup light brown sugar
  • 1.5 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For the filling:

  • 1 cup strawberry pie filling (or any pie filling of your choice)
  • ½ cup sour cream
  • ¼ cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 egg
  • ½ teaspoon vanilla extract


Instructions

  1. Prepare the pan: Grease an 8-inch square pan on the sides and bottom or line it with parchment paper. Set it aside for later use.
  2. Preheat the oven: Set the oven temperature to 375 degrees Fahrenheit (190 degrees Celsius) to preheat.
  3. Make the crust and crumb topping: In a medium mixing bowl, whisk together 1.5 cups flour, ½ cup light brown sugar, ½ teaspoon baking soda, ½ teaspoon baking powder, and ¼ teaspoon salt. Add the melted butter and stir until a dough forms. Reserve about ¾ cup of this mixture to use as the crumb topping later. Press the remaining dough evenly into the bottom of the prepared pan to form the crust. Set aside.
  4. Prepare the sour cream filling: In a large mixing bowl, combine the sour cream, granulated sugar, 1 tablespoon flour, egg, and vanilla extract. Mix together until fully combined and smooth.
  5. Assemble the bars: Pour the sour cream filling evenly over the crust in the pan. Spoon the strawberry pie filling evenly on top of the sour cream layer. Using a spoon, gently swirl the pie filling slightly into the sour cream layer for a marbled effect.
  6. Add the crumb topping: Sprinkle the reserved crumb topping mixture evenly over the top of the assembled fillings.
