Strawberry Tiramisu is a delightful no-bake dessert featuring ladyfinger cookies soaked in a homemade strawberry syrup, layered with a luscious mascarpone cream and fresh strawberries. Ingredients

Cookies

  • 24 ladyfingers (Savoiardi brand preferred)

Strawberry Sauce

  • ⅓ cup strawberry jam
  • 3 tablespoons water
  • 1 tablespoon lemon juice

Filling

  • 8 ounces mascarpone cheese
  • ½ cup heavy cream
  • ½ cup sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest

Additional

  • 2 cups sliced fresh strawberries


Instructions

  1. Make strawberry sauce: In a small mixing bowl, thoroughly stir together the strawberry jam, water, and lemon juice until the mixture is smooth and well combined. This will serve as the soaking syrup for the ladyfingers.
  2. Make filling: In a medium mixing bowl, beat the mascarpone cheese, heavy cream, sugar, vanilla extract, and lemon zest together for about 2 minutes. Continue beating until the mixture becomes thick, creamy, and resembles whipped cream in consistency.
  3. Dip cookies: Take 12 ladyfinger cookies and dip each one individually into the prepared strawberry sauce. Quickly soak the cookies so they absorb the syrup without becoming soggy. Lay the dipped cookies in a single layer in an 8×8 inch square baking dish or a similar-sized serving dish.
  4. Spread cream and strawberries: Evenly spread half of the mascarpone cream filling over the layer of soaked ladyfingers. Then, sprinkle half of the sliced strawberries over the creamy layer.
  5. Make a second layer: Repeat the process by dipping the remaining 12 ladyfinger cookies in the strawberry sauce and layering them over the strawberries. Follow this by spreading the remaining mascarpone filling and topping with the rest of the sliced strawberries.
  6. Cover and chill: Cover the assembled tiramisu tightly with plastic wrap and refrigerate for at least 8 hours to allow the flavors to meld and the dessert to set properly before serving.

Notes

  • You can top the tiramisu with extra fresh berries such as blueberries, raspberries, or blackberries for added color and flavor.
