  • 2 to 3 ripe peaches, pitted and diced
  • ½ red bell pepper, diced
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • Juice and zest of 1 lime
  • 1 small garlic clove, grated
  • ½ jalapeño pepper, minced

Seasonings

  • ¼ teaspoon sea salt, plus more to taste


Instructions

  1. Prepare Ingredients: Start by washing and dicing the ripe peaches, red bell pepper, and red onion. Chop the fresh cilantro finely. Mince the jalapeño pepper, ensuring to remove seeds if you prefer less heat. Grate a small garlic clove and zest and juice one fresh lime.
  2. Combine Ingredients: In a medium bowl, gently mix together the diced peaches, bell pepper, onion, cilantro, lime juice and zest, grated garlic, and minced jalapeño. Sprinkle in the sea salt.
