Ingredients

Caramel Layer

  • 1 bag Kraft caramels, unwrapped
  • 6 cups whole Ritz crackers

Chocolate Coating

  • 4 cups mini chocolate chips
  • 1/2 cup white chocolate

Instructions

Return the bowl over the simmering water and stir until the chocolate reheats to 89° F, achieving a proper temper.
  5. Assemble Cookie Layers: Top each softened caramel cracker with another Ritz cracker to form a sandwich. Using a fish spatula, coat each sandwich generously with tempered chocolate, ensuring an even coating without overloading.
  6. Melt White Chocolate: In a separate bowl over the same double boiler, melt the white chocolate until smooth and creamy.
  7. Cool and Decorate: Let the chocolate-coated cookies cool completely at room temperature on the sheet pan. Once cooled, drizzle melted white chocolate artistically over the cookies with a small spoon.
