Ingredients
Flatbread Ingredients
- 1 cup cottage cheese
- 2 eggs
- Garlic powder, to taste (optional)
- Onion powder, to taste (optional)
- Smoked paprika, to taste (optional)
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Preheat the oven: Set your oven to 350 °F (175 °C) and grease a parchment-lined baking sheet to prevent sticking.
- Blend the batter: In a mixing bowl or using an immersion blender, combine the cottage cheese, eggs, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper. Blend thoroughly until you have a smooth batter.
- Pour and spread the mixture: Pour the blended mixture onto the prepared baking sheet, spreading it evenly to form a large flatbread shape.
- Bake: Place the baking sheet on the lower rack of the oven and bake for 28 to 30 minutes until the flatbread is set and slightly golden on the edges.
- Cool: Remove from the oven and transfer the flatbread onto a wire rack to cool for 5 to 10 minutes before slicing and serving.
Notes
- For best results, use full-fat cottage cheese for a richer texture.
- Season the flatbread to your taste, or omit spices for a plain base.
- Letting the flatbread cool slightly helps it hold together better when sliced.
- This flatbread pairs well with various toppings like avocado, tomato, or smoked salmon.
- Store leftover flatbread in an airtight container in the refrigerator for up to 3 days.
