Filling

  • 1 cup fresh spinach
  • 1 recipe tofu scramble
  • ½ cup cooked black beans, drained and rinsed
  • 1 roasted red bell pepper, thinly sliced
  • 1 avocado, thinly sliced
  • ⅓ cup pickled onions or chopped scallions
  • 1 serrano or jalapeño pepper, thinly sliced
  • Sea salt, to taste
  • Lime wedges, for squeezing

Instructions

  1. Prepare the tortilla bases: Lay out the four large tortillas on a clean surface, equally spaced.
  2. Add spinach: Evenly divide the fresh spinach leaves among the tortillas as the first layer.
  3. Top with tofu scramble: Spoon the prepared tofu scramble over the spinach, distributing evenly.
  4. Add black beans and vegetables: Sprinkle the drained and rinsed black beans, roasted red bell pepper slices, and thinly sliced avocado over the tofu scramble.
  5. Garnish with pickled onions and peppers: Scatter the pickled onions or chopped scallions and thinly sliced serrano or jalapeño pepper on top for brightness and heat.
  6. Season and add lime: Lightly season with sea salt to taste and add a squeeze of fresh lime juice over the fillings.
  7. Fold the burrito: Fold the left and right sides of each tortilla over the filling, then fold the bottom flap up and over. Tuck the sides and roll tightly to secure the burrito.
