- Prepare the almond milk mixture: In a small bowl, whisk together the almond milk, nutritional yeast, minced garlic, Dijon mustard, ground turmeric, ground cumin, and ½ teaspoon of salt. Set this mixture aside to let the flavors combine.
- Sauté the onions: Heat the olive oil in a large skillet over medium heat. Add the diced yellow onion along with a pinch of salt and freshly ground black pepper. Cook the onions until they become soft and translucent, about 5 minutes, stirring occasionally to prevent burning.
- Cook the tofu: Add the crumbled extra-firm tofu to the skillet with the onions. Cook for 3 to 5 minutes, stirring frequently to ensure the tofu is heated thoroughly and starts to absorb the flavors.
- Add the almond milk mixture: Reduce the heat to low, then pour the almond milk and spice mixture into the skillet. Stir gently and cook for about 3 minutes, allowing the tofu to absorb the flavor and the mixture to thicken slightly. Stir occasionally to prevent sticking.
- Season and serve: Taste the scramble and adjust the seasoning by adding an additional ¼ to ½ teaspoon of salt and freshly ground black pepper, if desired. Serve warm with toast, fresh fruit, or your favorite breakfast sides.
