Description

This tofu scramble is a healthy, delicious vegan breakfast that's easy to make in one pan. Perfect for weekdays and weekends, it features crumbled extra-firm tofu cooked with flavorful spices, garlic, and onions, creating a savory and satisfying dish. Serve it with toast and fresh fruit or enjoy it on its own for a nutritious start to your day.

Ingredients

Tofu Scramble Mixture

  • ⅓ cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 2 garlic cloves, minced
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon ground cumin
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Cooking Ingredients

  • 1 tablespoon extra virgin olive oil
  • ½ cup diced yellow onion
  • 14 ounces extra-firm tofu, patted dry and crumbled

Instructions

  1. Prepare the almond milk mixture: In a small bowl, whisk together the almond milk, nutritional yeast, minced garlic, Dijon mustard, ground turmeric, ground cumin, and ½ teaspoon of salt. Set this mixture aside to let the flavors combine.
  2. Sauté the onions: Heat the olive oil in a large skillet over medium heat. Add the diced yellow onion along with a pinch of salt and freshly ground black pepper. Cook the onions until they become soft and translucent, about 5 minutes, stirring occasionally to prevent burning.
  3. Cook the tofu: Add the crumbled extra-firm tofu to the skillet with the onions. Cook for 3 to 5 minutes, stirring frequently to ensure the tofu is heated thoroughly and starts to absorb the flavors.
  4. Add the almond milk mixture: Reduce the heat to low, then pour the almond milk and spice mixture into the skillet. Stir gently and cook for about 3 minutes, allowing the tofu to absorb the flavor and the mixture to thicken slightly. Stir occasionally to prevent sticking.
  5. Season and serve: Taste the scramble and adjust the seasoning by adding an additional ¼ to ½ teaspoon of salt and freshly ground black pepper, if desired. Serve warm with toast, fresh fruit, or your favorite breakfast sides.

Notes

  • Ensure the tofu is pressed and patted dry to remove excess moisture for better texture.
  • Feel free to add vegetables like spinach, bell peppers, or mushrooms for extra nutrition.
  • Adjust the seasonings to your taste preference, especially the turmeric and nutritional yeast for color and flavor intensity.
  • This dish is best served fresh but can be refrigerated for up to 3 days.
  • Use gluten-free bread for a gluten-free meal option.
