Instructions
- Make the Dough: In a large bowl, combine the flour and salt. Cut the cold, cubed butter into the flour mixture using a pastry knife or pulse briefly in a food processor with a mixing attachment until the mixture resembles coarse crumbs.
- Add Ice Water: Gradually add the ice water, one tablespoon at a time, stirring gently until the dough just comes together. Avoid overmixing to keep the pastry flaky.
- Chill the Dough: Form the dough into a ball, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes. For best results, you can chill the dough overnight to improve texture and flavor.
- Preheat Oven: When ready to assemble, preheat the oven to 375°F (190°C).
- Roll Out and Line Pan: Roll the chilled dough on a lightly floured surface into a 10-inch circle. Gently transfer and fit it into a 9-inch pie pan, trimming any excess dough from the edges. Press the dough evenly into the pan.
- Create Filling Channels: Use the remaining dough to form decorative channels in the tart crust to separate the different fillings. Traditional shapes include triangles, stars, or diamonds. You can mold these by hand or roll out the dough and cut into strips or shapes, then place them on top of the pastry base to create sections.
