Herbs and Seasoning

  • 1/4 cup fresh parsley, roughly chopped and divided
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste


Instructions

  1. Prep and Boil Potatoes: Place the peeled and cubed potatoes into a large stockpot filled with cold water, adding a large pinch of salt. Bring the water to a boil over medium-high heat. Once boiling, maintain a rolling boil and cook the potatoes until they are fork-tender, approximately 10-15 minutes, then drain the water.
  2. Stew Potatoes in Milk and Parsley: Return the drained potatoes to the stockpot, add 1 cup of the milk along with half of the chopped parsley. Stew the potatoes gently in the milk and parsley for 5 to 9 minutes, stirring occasionally to prevent sticking and to allow the potatoes to absorb the flavors.
  3. Prepare the Roux: In the same pot, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour to create a roux. Continue whisking for about 3 minutes to cook out the raw flour taste, forming a thick paste.
  4. Add Remaining Milk and Parsley to Sauce: Gradually pour in the remaining 1 cup of milk while whisking constantly to prevent lumps. Add the remaining chopped parsley and continue to whisk until the sauce thickens to a creamy consistency.
  5. Combine and Season: Add the stewed potatoes back into the thickened parsley milk sauce. Stir gently to coat the potatoes evenly. Season generously with kosher salt and freshly cracked black pepper to taste.
  6. Garnish and Serve: Transfer the Victorian stewed potatoes to a serving dish. Garnish with any remaining parsley and serve warm alongside your favorite main dishes.
