Ingredients

Roasted Vegetables

  • 1 large sweet potato, cubed
  • Extra-virgin olive oil, for drizzling
  • Sea salt and freshly ground black pepper, to taste

Fresh Vegetables and Greens

  • 1 watermelon radish
  • 2 medium carrots
  • 1 cup shredded red cabbage
  • Squeeze of lemon (for tossing vegetables)
  • 8 kale leaves, stemmed and chopped
  • Squeeze of lemon (for massaging kale)
  • Sea salt, a few pinches (for massaging kale)

Grains and Protein

  • 2 cups cooked brown rice or quinoa
  • 1 cup cooked chickpeas or cooked lentils

Additional Toppings

  • ¾ cup sauerkraut or other fermented veggie
  • 2 tablespoons sesame seeds or hemp seeds

Instructions

  1. Preheat Oven and Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Roast Sweet Potatoes: Toss the cubed sweet potatoes with olive oil, salt, and freshly ground black pepper to ensure even flavoring. Spread them out on the prepared baking sheet in a single layer. Roast in the oven for 20 minutes or until golden brown and tender, stirring halfway if desired for even roasting.
  3. Prepare Fresh Vegetables: While the sweet potatoes roast, thinly slice the watermelon radish into rounds using a mandoline for consistent thin slices. Use a vegetable peeler to shave the carrots into delicate ribbons. Toss the radish slices, carrot ribbons, and shredded red cabbage with a squeeze of fresh lemon juice to brighten the flavors and prevent oxidation. Set this mixture aside.
  4. Massage the Kale: Place the stemmed and chopped kale leaves into a large bowl. Add a squeeze of lemon juice and a few pinches of sea salt. Using your hands, massage the kale thoroughly until it softens and wilts, reducing in volume by about half. This process improves its texture and makes it more pleasant to eat raw.
  5. Assemble the Buddha Bowls: For each serving, arrange a base of cooked brown rice or quinoa in bowls. Top with cooked chickpeas or lentils, the massaged kale, the lemon-tossed radish, carrot, and cabbage mix, roasted sweet potatoes, sauerkraut or another fermented vegetable, and sprinkle with sesame seeds or hemp seeds. Add microgreens if using for extra freshness and color.
  6. Season and Serve: Season each bowl with salt and freshly ground black pepper to taste. Serve immediately with a generous drizzle or side of turmeric tahini sauce to add creaminess and a burst of flavor.
