Ingredients

Instructions

  1. Combine Ingredients: In a large nonreactive (nonstick) saucepan, add maple syrup, corn syrup, water, granulated sugar, fresh peeled and finely chopped ginger, ground ginger, and salt. Mix to combine.
  2. Simmer Sauce: Place the saucepan over medium heat and bring the mixture to a simmer. Let it simmer gently for 2 to 3 minutes to allow the flavors to meld.
  3. Cool Sauce: Remove the saucepan from the heat and allow the sauce to cool for 10 minutes. This resting time enhances the infusion of ginger flavor.
  4. Strain Sauce: Pour the sauce through a fine mesh strainer, pressing down on the ginger solids to extract as much flavor as possible. Discard the ginger pulp and solids left in the strainer.
  5. Add Walnuts and Flavorings: Stir in the chopped roasted walnuts, vanilla extract, and lemon juice into the strained sauce, mixing thoroughly to combine all ingredients.
  6. Serve or Store: Let the sauce cool a bit more before drizzling over ice cream. For storage, refrigerate the sauce in an airtight container for up to one month. Reheat by microwaving in 10-second intervals as needed before serving again.
