  3. Shape the gnocchi: Divide the dough into six roughly equal portions. Roll one portion into a long rope shape about ¾ inch thick on a lightly floured surface. Cut the rope into ¾-inch pieces. Using an upside-down fork, gently drag each piece across the tines to create ridges and a curled shape. Toss the formed gnocchi lightly in flour to prevent sticking. Repeat with the remaining dough.
