- Heaping ½ cup dried cranberries
- ½ cup chopped pecans
- ⅓ cup chopped fresh parsley, plus more leaves for garnish
Instructions
- Preheat Oven and Prepare Baking Sheet: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Cook the Rice: In a medium saucepan, combine the rinsed rice blend, 2 cups of water, and 1 teaspoon of olive oil. Bring this mixture to a boil over medium-high heat.
